Ingredients
- 150 gms of Baby Potato
- 1 Onion, medium sized, peeled and finely chopped
- 2 Tomatoes, medium sized, finely chopped
- 1 clove Garlic, peeled and minced
- 1/4 inch Ginger, peeled and minced
- 3 Green chillies slit length wise
- 2 sprigs of each Thyme and Oregano (fresh one)
- Coriander leaves few
- Salt to taste
- 2 tbsp of Oil
Method
- Boil the baby potatoes or microwave until it's cooked. Peel the skin and keep. Cut the potatoes into half if it is big in size..
- Heat 1 tbsp oil in a wok and fry these baby potatoes till it becomes slightly brown in color and remove from wok and keep aside.
- Heat remaining 1 tbsp oil in the same wok, when hot add the chopped onions, minced garlic, ginger and green chillies together and till fry the onion turns translucent.
- Next add the tomatoes and pinch of salt and cook for 3-4 Min's, stir in between.
- Add the fresh herbs thyme, oregano and coriander leaves mix well.
- Then add the potatoes, salt and mix well and cook for another one Min.
- Serve with rice and sambhar/ Ghee rice / Jeera rice.
