Herb Flavoured Baby Potato Curry - Foodi Logic


Ingredients
  • 150 gms of Baby Potato
  • 1 Onion, medium sized, peeled and finely chopped
  • 2 Tomatoes, medium sized, finely chopped
  • 1 clove Garlic, peeled and minced
  • 1/4 inch Ginger, peeled and minced
  • 3 Green chillies slit length wise
  • 2 sprigs of each Thyme and Oregano (fresh one)
  • Coriander leaves few
  • Salt to taste
  • 2 tbsp of Oil

Method
  • Boil the baby potatoes or microwave until it's cooked. Peel the skin and keep. Cut the potatoes into half if it is big in size..
  • Heat 1 tbsp oil in a wok and fry these baby potatoes till it becomes slightly brown in color and remove from wok and keep aside.
  • Heat remaining 1 tbsp oil in the same wok, when hot add the chopped onions, minced garlic, ginger and green chillies together and till fry the onion turns translucent.
  • Next add the tomatoes and pinch of salt and cook for 3-4 Min's, stir in between.
  • Add the fresh herbs thyme, oregano and coriander leaves mix well.
  • Then add the potatoes, salt and mix well and cook for another one Min.
  • Serve with rice and sambhar/ Ghee rice / Jeera rice.
